HOW TO PREPARE Ginataang Hipon with Kalabasa and Sitaw

Ginataang Hipon with Kalabasa and Sitaw





INGREDIENTS:

2 cups kalabasa (kabocha squash), pared, seeded and cut into 2-inch chunks
2 cups sitaw (long beans), ends trimmed and cut into 3-inch lengths
1/2 lb large shrimps (about 7 to 8 pieces), tendrils trimmed
2 to 3 cloves garlic, peeled and minced
1 small onion, peeled and thinly sliced
2 cups coconut milk
1 banana chili
1 tablespoon fish sauce
1 tablespoon vegetable oil
salt to taste


INSTRUCTIONS:

  1. In a pot, heat oil over medium heat. Saute onions and garlic until limp. Add fish sauce and continue to cook, stirring occasionally, for about 1 to 2 minutes.
  2. Pour in coconut milk and add chili. Bring to a gentle boil and continue to cook for about 5 minutes.
  3. Add squash and cook for about 3 to 5 minutes. Add long beans and continue to cook for another 5 to 6 minutes. Add shrimp and continue to cook for about 4 to 5 minutes or until squash is softened, long beans are tender yet crisp and shrimps have changed color. Season with salt to taste.

Let’s assume you want to buy 10 shares of PLDT (Stock Code: TEL) at a price of P2,500. Let’s also assume, for this example, that the broker’s fee is 0.25% — similar to what most online stockbrokers in the Philippines are charging.

The fee computation is as follows:

This time, there is an additional fee, the stock transactionor sales tax charged to sellers of stocks.

Breakeven Point

Thus, before selling your stock, make sure your selling price incorporates not just your acquisition cost but also the fees and charges paid when you bought the stock and other fees you will have to pay once you sell it. Otherwise, even if you sold your stock at a slightly higher price than your original price, it is possible that you actually might have booked a loss, instead of a gain.

So at what price or how much should your stock rise before you sell it to be assured of profit?

The breakeven point would vary depending on the broker’s rate of commission but for a 0.25% commission, your stock price needs to rise above 1.09% in order to book a profit. That means the stock price, compared to your acquisition price, should increase by at least 1.09% before you sell it so that you will make money.

Explanation of Stock Fees, Taxes and Charges in the PSE
  • Brokerage commission. You use a broker, regardless if a live broker or online broker, to help facilitate the buying and selling of stocks. They make money from the commissions charged on your every trade. Remember, the more trades you do with them — even if the transaction is to sell at a loss — they get to earn commissions from the trade. So be wary if they keep on telling you to trade, even if you’re not comfortable with the transaction. Broker’s commission vary per broker, but the maximum rate they can charge is 1.5% of the transaction amount, or a fixed minimum fee of P20, whichever is higher. The transaction is also charged an additional 12% VAT.

  • SCCP or Clearing Fee. When you buy a stock, you pay money and, in return, you get ownership of that stock. There is an agency that facilitates proper stock clearing and settlement. In simple terms, they ensure that your payment as buyer goes to the seller of the stock and the stock is properly transferred to your name. This agency is the “Securities Clearing Corporation of the Philippines” or the SCCP, a wholly-owned subsidiary of the Philippine Stock Exchange Inc. Their role is to synchronize the transfer of funds and securities to the beneficial owner. The stock seller, through their broker, must deliver the securities to the SCCP and, once the securities are properly transferred, the SCCP transfers funds to them as payment for the sale. For the work that they do, they charge 0.01% of the transaction amount.
  • PSE Transaction Fee. The Philippine Stock Exchange charges 0.005% of the gross trade amount for every stock transaction.
  • Stock Transaction or Sales Tax. The government, of course, earns money too from stock trading transactions by charging 0.5% whenever a stock selling transaction is made. Take note this tax is charged even if the transaction resulted in a loss.

HISTORY OF PHILIPPINE STOCK EXCHANGE

The Philippine Stock Exchange (PSE) is the only stock exchange in the Philippines. It is one of the oldest stock exchanges in Asia, having been in continuous operation since the establishment of the Manila Stock Exchangein 1927. It currently maintains two trading floors, one at the PSE Centre (Tektite), Ortigas Center in Pasig City, and one at its principal office at the Ayala Tower One in Makati City's Central Business District. The PSE is composed of a 15-man Board of Directors with Jose T. Pardo as Chairman.

The main index for PSE is the PSEi, which is composed of a fixed basket of thirty (30) listed companies. The PSEi measures the relative changes in the free float-adjusted market capitalization of the 30 largest and most active common stocks listed at the PSE. The selection of companies in the PSEi is based on a specific set of public float, liquidity and market capitalization criteria. There are also six sector-based indices as well as a broader all shares index.

Trading in the PSE is a continuous session from 9:30AM to 3:30PM daily with a recess from 12:00PM to 1:30PM.

History

The Philippine Stock Exchange was formed from the country's two former stock exchanges, the Manila Stock Exchange (MSE), established on August 8, 1927, and the Makati Stock Exchange (MkSE), which was established on May 27, 1963.

Although both the MSE and the MkSE traded the same stocks of the same companies, the bourses were separate stock exchanges for nearly 30 years until December 23, 1992, when both exchanges were unified to become the present-day Philippine Stock Exchange.

In June 1998, the Securities and Exchange Commission (SEC) granted the PSE a "Self-Regulatory Organization" (SRO) status, which meant that the bourse can implement its own rules and establish penalties on erring trading participants (TPs) and listed companies.

In 2001, one year after the enactment of the Securities Regulation Code, the PSE was transformed from a non-profit, non-stock, member-governed organization into a shareholder-based, revenue-earning corporation headed by a president and a board of directors. The PSE eventually listed its own shares on the exchange (traded under the ticker symbol PSE) by way of introduction on December 15, 2003.

Business

On January 4, 1993, MSE started the computerization of its operations using the Stratus Trading System (STS) with a company called Equicom. Later that year, on June 15, MkSE adopted the MakTrade trading system. Both systems were linked on March 25, 1994 to produce a One Price-One Market exchange. On November 13, 1995, the implementation of the Unified Trading System (UTS) allowed the use of a single-order-book system on a MakTrade software where all the orders are posted and matched in one computer.

In October 2004, the Securities Clearing Corporation of the Philippines (SCCP), a clearing and settlement agency for depository eligible trades, became a wholly owned subsidiary of the PSE. The SCCP acts as the settlement coordinator and risk manager for broker transactions as well as administrator of the trade guaranty fund.

In 2005, the PSE adopted an online daily disclosure system (ODiSy) to improve the transparency of listed companies and ensure full, fair, timely and accurate disclosure of material information from all listed companies. The ODiSy provides 24/7 online system access for the submission of all types of disclosures.

On July 26, 2010, the PSE launched its new trading system, PSEtrade, which replaced the MakTrade system. The system was acquired from the New York Stock Exchange. The PSEtrade is designed to trade a wide range of cash, debt and derivative instruments, something which was not possible before using the MakTrade system. The PSEtrade is also expected to significantly improve the capacity of the PSE to handle any future sharp increase in its value turnover.

On July 7, 2011, the PSE spun off its Market Regulation Division into a separate independent company named Capital Markets Integrity Corporation (CMIC) as part of the Exchange's commitment to good corporate governance. The CMIC shall ensure the regulatory independence over the audit, surveillance and compliance activities of TPs. The CMIC received its provisional Self-Regulatory Organization status on February 2, 2012 and subsequently began operations in March of the same year. On May 8, 2012, the CMIC launched its new surveillance system called Total Market Surveillance (TMS), which was acquired from the Korea Stock Exchange. The TMS features detection rules, statistics analysis models, and pattern recognition logics needed to enhance monitoring of stock market transactions. HOW TO PREPARE BICOL EXPRESS

INGREDIENTS:

1/2 kilo pork, sliced thinly
1/2 kilo baguio beans, sliced
1/2 cup Jalapeno chilis
1 onion, chopped
1 clove garlic, crushed
2 cups coconut milk
2 cups coconut cream
salt and pepper to taste.


INSTRUCTIONS:

In a pan, heat a little oil and start browning the pork. Once done, set aside.
Saute garlic and onion in a little oil, then add the cooked pork.
Add the coconut milk and simmer for 10 minutes.
Once the pork and the baguio beans absorbed the coconut milk, pour in the coconut cream and bring it to boil. Add in the chili and let the sauce thickens.
Season with salt and pepper.

Pinakbet (Filipino Shrimp and Vegetable Stew)



INGREDIENTS:

1 lb. medium shrimps, shelled and deveined
1 cup water
1/3 cup sautéed shrimp paste plus 1 teaspoon to flavor shrimps
3 tablespoons olive oil
2 cloves garlic, chopped
1 thumb- size ginger, crushed
1 tomato, cut into wedges
1 Chinese or Japanese eggplant, sliced into the diagonal (1-inch thick)
1 fresh bittermelon, halved, deseeded and sliced into the diagonal (1-inch thick)
1 lb. banana squash, peeled, deseeded and cut into chunks
½ lb. fresh okra
½ lb. green beans, ends trimmed
salt to taste


INSTRUCTIONS:

  1. Heat a skillet with 1 tablespoon oil. Sauté shrimps for 2 minutes or until it turned pink. Stir in 1 teaspoon shrimp paste. Transfer cooked shrimps to a plate and set aside.
  2. Using the same skillet, heat the remaining 2 tablespoons oil. Add garlic and ginger; sauté for 1 minute. Add shrimp paste, stir for 20 seconds. Add squash and water; cover and let simmer for 5 minutes.
  3. Add the rest of the vegetables, cover and let simmer for another 10 minutes or until vegetables are tender. Make sure to stir the mixture occasionally.
  4. Add cooked shrimps and tomato; gently stir and correct seasonings.

INGREDIENTS:
  1. 2 cups kalabasa (kabocha squash), pared, seeded and cut into 2-inch chunks
  2. 2 cups sitaw (long beans), ends trimmed and cut into 3-inch lengths
  3. 1/2 lb large shrimps (about 7 to 8 pieces), tendrils trimmed
  4. 2 to 3 cloves garlic, peeled and minced
  5. 1 small onion, peeled and thinly sliced
  6. 2 cups coconut milk
  7. 1 banana chili
  8. 1 tablespoon fish sauce
  9. 1 tablespoon vegetable oil
  10. salt to taste
INSTRUCTIONS:

In a pot, heat oil over medium heat. Saute onions and garlic until limp. Add fish sauce and continue to cook, stirring occasionally, for about 1 to 2 minutes.
Pour in coconut milk and add chili. Bring to a gentle boil and continue to cook for about 5 minutes.
Add squash and cook for about 3 to 5 minutes. Add long beans and continue to cook for another 5 to 6 minutes. Add shrimp and continue to cook for about 4 to 5 minutes or until squash is softened, long beans are tender yet crisp and shrimps have changed color. Season with salt to taste.

INGREDIENTS:

  1. 2 medium sized ampalaya
  2. 2 eggs, beaten
  3. 3 cloves garlic, minced
  4. 1 medium sized onion, chopped
  5. 1 medium sized tomato, deseeded and chopped
  6. salt
  7. pepper
  8. cooking oil

INSTRUCTIONS:

  1. Cut the ends of the ampalaya. Slice it into half lengthwise, and remove the seeds and white innards. Cut each half across thinly like half moons.
  2. To remove its bitterness, soak the ampalaya in a solution of 1 tbsp salt and 2 cups water for 10 to 20 minutes. Using a colander, rinse them with water, and then pat dry.
  3. Heat the oil. Sauté the garlic, onion and tomatoes.
  4. Add the ampalaya and cook for about 5 minutes or until it is tender. Add the beaten eggs, and cook until it firms up. Season with salt and pepper to taste.
  5. Try no to overcook the ampalaya so that it can still retain a little of its crunchiness.
  6. Remove from pan and serve with rice.

INGREDIENTS:

1/2 kilo squid
1/2 cup water
1/2 cup vinegar
1 onion; chopped
1 tomato; chopped
4 cloves garlic; crushed
1/4 cup soy sauce
1 cup water
2 laurel leaves
1/2 tablespoon ground pepper
Sugar to taste
Salt to taste

INSTRUCTIONS:

  1. Wash and clean the squid by removing the eyes, membrane, and stomach.
  2. Boil squid in saucepan with vinegar, garlic, pepper, soy sauce, salt, and little water. 
  3. Simmer until the squid is tender. Do not overcook. Drain and set aside. Save the sauce.
  4. In a skillet, sauté garlic (taken from the sauce) until brown, then add the onion, and tomato. 
  5. When onion becomes translucent, add the squid and laurel leaves. 
  6. Add sauce and season with sugar according to taste. Simmer until a thick broth is formed, then serve.
